Method

House-made Pickles

    Prepare quick pickle brine by combining 1 cup white vinegar, 1 cup water, 1 tbsp sugar, 1/2 tsp kosher salt, 1 smashed garlic clove, 1/2 tsp black peppercorns, and 2 sprigs dill in a small saucepan. Heat until sugar and salt dissolve, then remove from heat and cool to room temperature (about 10 minutes).

    Place 6 mini pickles or cucumber spears into a clean jar or container. Pour cooled brine over the cucumbers so they are fully submerged. Seal and refrigerate at least 30 minutes; ideally 2 hours for more flavor. Keep refrigerated until ready to assemble.

Fried Chicken

    If using whole chicken breasts, butterfly or pound to an even thickness (~3/4 inch) for even cooking. Pat dry with paper towels.

    Season chicken lightly with 1 tsp kosher salt and 1/2 tsp black pepper, then submerge in 1 cup buttermilk. Cover and refrigerate 30 minutes to 2 hours (buttermilk tenderizes and adds flavor).

    While chicken marinates, heat oil in a deep skillet or pot to 350°F (175°C). Use a thermometer for accuracy; oil should be deep enough to come halfway up the sides of the chicken when frying (about 1–1.25 liters in a 10-inch pan).

    In a shallow bowl, combine 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, and 1 tsp kosher salt. Mix thoroughly to distribute seasonings.

    Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the seasoned flour mixture, pressing firmly to form a good crust. For extra-crispy result, double-dredge: after first dredge, dip back briefly into buttermilk and dredge again in the flour mixture.

    Carefully lower chicken into hot oil, frying 3–5 minutes per side depending on thickness, until golden-brown and internal temperature reaches 165°F (74°C). Do not overcrowd the pan—fry in batches if needed. Maintain oil temperature around 325–350°F.

    Transfer fried chicken to a wire rack set over a sheet tray to drain and keep crisp. Rest 3–5 minutes before assembling.

Tabasco Honey

    Combine 1/4 cup honey, 1.5 tsp Tabasco, 1 tsp butter, and 1/2 tsp lemon juice in a small saucepan or microwave-safe bowl. Warm gently over low heat or in 10–15 second microwave bursts, stirring until butter melts and sauce is glossy and combined. Taste and adjust hot sauce (add more Tabasco for heat) or lemon for brightness.

    Brush or drizzle Tabasco honey over the fried chicken just before serving so the glaze is sticky but the crust stays crisp.

Optional - Mother & Child Reunion

    If adding the egg, heat 1 tsp butter or neutral oil in a small nonstick skillet over medium heat. Crack in 1 large egg and fry sunny-side up until whites are set but yolk still runny, or to desired doneness (about 2–3 minutes for runny yolk). Season with a pinch of salt and pepper.

Finish & Serve

    Toast burger buns or sandwich rolls briefly in a dry skillet or under a broiler until golden.

    Spread 1 tbsp mayonnaise on each bun bottom. Place a lettuce leaf, then a fried chicken breast on each. Spoon or brush Tabasco honey over the chicken (use ~1 tbsp per sandwich). Top with 2–3 house-made pickle slices per sandwich.

    If using the optional egg, place the fried egg on top of the glazed chicken (this is the "Mother & Child Reunion"). Finish with the bun top, press gently, and serve immediately while hot and crisp.

    Serve 1 sandwich per person. Provide extra Tabasco honey on the side if desired.
