    Prepare spinach

    Heat a medium skillet over medium heat and add 1 tablespoon extra-virgin olive oil. Add the chopped spinach and cook, stirring, until wilted and any excess moisture mostly evaporates, about 2–3 minutes. Transfer spinach to a colander, press gently to remove excess liquid, then roughly chop again if needed and return to a mixing bowl to cool slightly.

    Combine vegetables and aromatics

    To the cooled spinach in the mixing bowl, add the diced tomatoes, sliced roasted red peppers, and finely diced red onion. Add chopped parsley, oregano, salt, and black pepper. Gently fold to combine so the vegetables are evenly distributed.

    Add egg whites and goat cheese

    Pour 1 cup of pasteurized egg whites over the vegetable-spinach mixture. Crumble in the 4 oz of softened goat cheese and gently fold so some goat cheese breaks into small pockets but some larger pieces remain (gives creaminess). If the filling seems very wet, add a tablespoon of the crushed biscuit crumbs (see next section) to absorb a little moisture.

    Toast biscuit crumbs

    In a small skillet over medium-low heat, warm 1 teaspoon olive oil. Add the 1/2 cup crushed biscuit or cracker crumbs and toast, stirring frequently, until light golden and fragrant, about 2–3 minutes. Remove from heat and let cool slightly. Stir in lemon zest and lemon juice if using.

    Fold in crumbs and adjust seasoning

    Fold 2 tablespoons of the toasted crumbs into the filling mixture to add body and absorb excess moisture; reserve remaining crumbs to sprinkle on top. Taste the filling and adjust salt and pepper as needed.

    Portion and finish

    Spoon the filling into serving bowls, onto toasted bread, or into a warmed pita depending on service. Scatter the reserved toasted biscuit crumbs over the top for crunch and garnish with a light drizzle (about 1/2 teaspoon per serving) of extra-virgin olive oil and a small crumble of extra goat cheese if desired.
