Corn Tortillas

    Warm and crisp tortillas

    Heat a large dry skillet or comal over medium-high heat. Lightly brush both sides of each tortilla with a thin layer of oil. Toast tortillas 30–45 seconds per side until they are pliable with a few browned spots. Keep warm wrapped in a clean kitchen towel. If you prefer slightly crisped tortillas, press each toasted tortilla in the hot skillet for 10–15 seconds per side.

    Season toasted tortillas lightly with 1/2 tsp kosher salt if desired and keep covered until serving.

Scrambled Eggs

    Whisk eggs

    In a large bowl, crack 12 eggs. Add 1/4 cup milk, 1 tsp kosher salt, and 1/2 tsp black pepper. Whisk vigorously until fully combined and slightly frothy to incorporate air for tender curds.

    Cook gently

    Heat a large nonstick skillet over medium-low heat and add 2 tbsp unsalted butter. Once butter is melted and foaming but not browned, pour in the egg mixture. Let eggs sit undisturbed for about 15–20 seconds until the edges begin to set. Using a rubber spatula, gently push the eggs from the edges toward the center to form large soft curds. Continue folding every 10–15 seconds until mostly set but still slightly glossy — about 3–5 minutes total depending on heat. Remove from heat just before fully set; residual heat will finish them.

    Stir in chopped cilantro (optional) and taste for seasoning, adjusting with a pinch more salt if needed. Transfer to a warm serving dish and keep covered.

Potatoes (Crispy Home Fries)

    Par-cook potatoes

    Place diced potatoes in a pot and cover with cold water. Add a big pinch of salt and bring to a simmer. Cook 5–7 minutes until just tender when pierced with a fork but not falling apart. Drain well and let steam-dry for a few minutes to remove surface moisture.

    Crisp potatoes

    Heat a large skillet over medium-high heat and add 2 tbsp olive oil. Once shimmering, add the par-cooked potatoes in a single layer. Season with 1 tsp kosher salt, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tsp black pepper. Avoid stirring for 3–4 minutes to let a crust form, then toss or flip and continue cooking until well-browned and crisp on most sides, about 8–10 minutes total. Taste and adjust seasoning. Stir in chopped parsley or cilantro just before serving.

    Chorizo

    Heat a skillet over medium heat. Add 1 lb chorizo (remove casings if using links) and cook, breaking it up with a spoon, until browned and cooked through, 7–9 minutes. Drain excess fat on paper towels and keep warm.

    Rotisserie Chicken

    Warm 2 cups shredded rotisserie chicken in a skillet with a tablespoon of oil or a splash of chicken stock over medium heat for 3–4 minutes until heated through. Season with a pinch of salt and pepper and optionally a squeeze of lime.

    Black Beans (vegetarian)

    Heat 2 cups drained and rinsed black beans in a saucepan with 1/4 cup water or stock, 1/2 tsp ground cumin, and a pinch of salt. Simmer gently 4–5 minutes to warm and allow flavors to meld.

    Bacon

    Cook 8 slices of bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning as needed. Drain on paper towels and chop into bite-sized pieces.

Pico de Gallo

    In a bowl combine 2 cups diced tomatoes, 1/2 cup diced onion, 1 minced jalapeño (seeded for less heat), 1/2 cup chopped cilantro, 2 tbsp fresh lime juice, and 1/2 tsp kosher salt. Mix gently and let sit 10–15 minutes at room temperature to allow flavors to marry. Taste and adjust lime or salt.

Salsa Verde

    To make a quick salsa verde, roast or broil 10 halved tomatillos and 1 serrano pepper until soft and lightly charred (6–8 minutes). Transfer to a blender with 1/2 cup cilantro, 1 tbsp lime juice, and 3/4 tsp salt. Puree until smooth. Taste and adjust heat or salt. Chill or serve at room temperature.

Cheese & Toppings

    Arrange 1 cup crumbled cotija, 1/2 cup sour cream or crema, 2 cups sliced avocado or guacamole, lime wedges, and pickled red onions in small bowls for guests to top their tacos.

Assembly & Serving

    Set up a taco bar with warm tortillas, scrambled eggs, chosen proteins, crispy potatoes, pico de gallo, salsa verde, cotija, sour cream/crema, avocado/guacamole, and lime wedges. To assemble a taco: place a warm tortilla on a plate, add 2–3 tbsp scrambled eggs, 2–3 tbsp chosen protein, a spoonful of potatoes if desired, top with pico de gallo, drizzle salsa verde, sprinkle with cotija, add a dollop of crema and a squeeze of lime. Serve immediately so tortillas stay warm and ingredients retain texture.

    Leftovers: store components separately in airtight containers in the refrigerator for up to 3 days. Reheat eggs gently over low heat, potatoes in a skillet or oven to re-crisp, and tortillas wrapped in foil in a 300°F (150°C) oven until warm.
