    Chill everything

    Place the sparkling wine and all juices in the refrigerator at least 2 hours before serving so everything is well chilled. Cold ingredients preserve bubbles and prevent dilution.

    Prepare glassware and garnishes

    If serving individual mimosas, chill flutes in the refrigerator or freezer briefly. Slice orange rounds and pineapple wedges; set aside cranberries or grapefruit twists for garnish.

Mixing Pitchers (makes ~12 servings)

    Assemble juice options

    In four separate pitchers or one divided pitcher, pour the following base juice amounts so guests can choose: Orange: 4 cups orange juice. Grapefruit: 2 cups grapefruit juice. Pineapple: 2 cups pineapple juice. Cranberry: 2 cups cranberry juice. For Sunrise: pour 4 cups orange juice into a pitcher and reserve the grenadine separately.

    Top with sparkling wine

    When ready to serve, gently top each pitcher of juice with chilled sparkling wine at a roughly 2:1 ratio (juice to sparkling) for a balanced mimosa. For the quantities above: add 6 cups sparkling wine to the orange pitcher, 3 cups to grapefruit, 3 cups to pineapple, and 3 cups to cranberry. (If you prefer lighter mimosas, replace up to 2 cups of the sparkling wine across pitchers with sparkling water.) Stir each pitcher very gently once to combine — avoid vigorous stirring to preserve effervescence.

    Make Sunrise Mimosa

    For Sunrise mimosas (Orange + Grenadine): fill a champagne flute about 2/3 with the orange juice + sparkling mixture, then slowly drizzle about 1/2 tablespoon (or 1/4–1/2 oz) grenadine down the side of the glass so it settles near the bottom and creates a sunrise effect. Do not stir.

    Serve

    Pour mimosas into chilled flutes from the appropriate pitcher. Garnish each glass with an orange slice, pineapple wedge, or a few cranberries or a grapefruit twist as desired.

    Notes on proportions

    Standard mimosa ratio is about 1 part sparkling to 1–2 parts juice depending on sweetness and preference. The recipe quantities above yield about 12 servings (4–5 oz per serving). Adjust ratios and quantities to taste and to match your glass size.

    Storage

    Prepared pitchers with sparkling wine should be served immediately for best bubbles. If you must hold, keep chilled and gently top up with fresh sparkling wine before serving. Unopened juices will keep refrigerated 3–5 days; opened juices follow package guidance.
