Method
Bubbles

Chill the bottle of Champagne or Prosecco in the refrigerator for at least 2 hours before service. If short on time, place the bottle in an ice bath (equal parts ice and cold water) for 20–30 minutes until well chilled.

Just before serving, gently open the bottle by removing foil and wire cage, holding the cork and twisting the bottle slowly to ease the cork out with minimal fizz. Keep bottle chilled between pours.

Orange Mimosa Mix Preparation
In a pitcher or bowl, combine 2 cups orange juice with 4 tablespoons sparkling orange liqueur. Stir gently to combine. Taste and adjust sweetness or liqueur level to preference. Chill mixture briefly if needed.

Pineapple Mimosa Mix Preparation
In a separate container, combine 2 cups pineapple juice with 4 tablespoons light rum. Stir to incorporate and chill. Optionally add a pinch of crushed pineapple or a splash of pineapple syrup for extra body.

Cranberry (Ruby) Mimosa Mix Preparation
Combine 2 cups cranberry juice with 4 tablespoons vodka. Stir and chill. If the cranberry is very tart, add 1–2 teaspoons simple syrup (optional) to soften acidity.

Peach Bellini-style Mix Preparation
Whisk 2 cups peach nectar or puree with 4 tablespoons peach schnapps until smooth. If using whole fruit, mash and strain for a smoother texture. Chill; a slightly thicker puree will create a pretty layered effect when topped with bubbles.

Prepare garnishes: cut orange into thin rounds or half-moons, cut pineapple into wedges, slice fresh peach into thin slices if available, and have cranberries or lemon twists ready on a small plate. Keep garnishes chilled until service.

Fill a shallow serving bowl or tray with ice to rest the bottled bubbles on the table so guests can pour their own refills while keeping the bottle cold.
Assembling the Mimosa Flight

Place four chilled champagne flutes on the service tray or bar counter. If you prefer smaller tasters, use smaller flutes or tulip glasses.

For each flute, pour approximately 2–3 tablespoons (30–45 ml) of the chosen boozy juice mix into the bottom of the glass. Suggested order and approximate amounts per flute: Orange mix: 3 tbs (45 ml); Pineapple mix: 3 tbs (45 ml); Cranberry mix: 3 tbs (45 ml); Peach puree: 3 tbs (45 ml). Adjust amount to preference — the goal is a flight of 4 small pours to show distinct flavors.

Tilt each flute slightly and gently top with chilled Champagne/Prosecco to fill, pouring slowly to preserve bubbles and avoid overflow. Aim for roughly 3–4 ounces (90–120 ml) total per glass depending on flute size, leaving a little headspace.

Garnish each flute: place an orange slice on the rim of the orange mimosa, a pineapple wedge on the pineapple mimosa, a couple of cranberries or a lemon twist on the cranberry mimosa, and a peach slice or mint sprig on the peach mimosa.

Serve immediately, presenting the bottle of bubbles on ice beside the flight so guests can top up or refresh their glasses.
Service notes & safety

Offer water and remind guests these are boozy juices — each small pour contains added spirits. Recommend one or two small flutes per guest if they plan to drink responsibly.

If preparing in advance, keep juice mixes chilled separately and combine with bubbles only at service to preserve effervescence and freshness.
