Sausage

    Cook sausage patties

    Heat a nonstick or cast iron skillet over medium heat. Add 1 tsp vegetable oil and swirl to coat. Place 2 sausage patties in the skillet, leaving space between them. Cook 3–4 minutes on the first side until browned and edges start to crisp. Flip and cook 3–4 more minutes until internal temperature reaches 160°F (71°C) and patties are cooked through. If patties are thicker, reduce heat slightly and cover for 1–2 minutes to finish cooking. Transfer to a plate and tent with foil to keep warm.

    Beat egg

    Crack 1 large egg into a small bowl. Add 1 tsp milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk until uniform and slightly frothy.

    Cook egg patty

    Wipe the skillet used for sausage or use a separate small nonstick pan and heat over medium-low. Add 1 tsp unsalted butter and let it melt to coat the surface. Pour the beaten egg into the pan and immediately swirl to create an even thin round. Cook undisturbed for 45–60 seconds until edges set. Using a spatula, gently lift and flip the egg round and cook another 15–20 seconds just to finish. Remove egg and place on a plate.

    Toast bread

    Split the English muffin (or bun) and lightly butter both cut sides with 1 tsp butter. Toast in a dry skillet over medium heat or in a toaster until golden and crisp, about 1–2 minutes per side in a skillet.

    Assemble sandwich

    Place one toasted bottom half on your work surface. Put the first sausage patty on the bottom. Layer the cooked egg on top of the sausage, then add the second sausage patty (or arrange both patties beneath the egg if you prefer). Place 1 slice American cheese over the hot patties/egg so it begins to melt. Top with the toasted muffin top. If using condiments, spread ketchup or hot sauce on the top half before closing. Serve immediately.

    Cut sandwich in half if desired and serve hot. Enjoy with a side of fruit, hash browns, or coffee.
