Scrambled Eggs

    Prepare eggs

    Crack 2 large eggs into a small bowl. Add 2 tablespoons whole milk, a pinch of salt and a pinch of black pepper. Whisk briskly until the mixture is uniform and slightly frothy (about 20–30 seconds).

    Cook eggs

    Heat a nonstick skillet over medium-low heat. Add 1 teaspoon unsalted butter and let it melt and foam but not brown. Pour in the egg mixture. Let it sit undisturbed for about 10–15 seconds until the edges begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center, forming soft folds. Continue folding every 10–15 seconds until the curds are soft and slightly glossy but fully cooked, about 1–2 minutes total. Remove from heat immediately to avoid overcooking.

Choice of Breakfast Meat (select bacon or sausage)

    Cook bacon

    If serving bacon: place 2 slices of bacon in a cold skillet in a single layer. Turn heat to medium and cook 3–5 minutes per side, or until crispness reaches your child's preference. Transfer to a paper towel-lined plate to drain.

    Cook sausage

    If serving a sausage link: heat 1 teaspoon vegetable oil in a skillet over medium heat. Add the sausage link and cook, turning frequently, until browned on all sides and cooked through (internal temperature 160°F / 71°C), about 8–10 minutes depending on thickness. Transfer to a plate.

Sunrise Biscuit

    Warm biscuit

    Warm the buttermilk biscuit: for store-bought pre-baked biscuits, heat in a 350°F (175°C) oven for 6–8 minutes or microwave on high for 12–18 seconds until warm. For fresh biscuits, warm 3–4 minutes in the oven. Split the biscuit in half, spread 1 teaspoon unsalted butter on the cut sides, and optionally add 1 teaspoon honey or jam.

Plating & Serve

    Assemble the plate: place the warm biscuit on the plate, add the scrambled eggs alongside, and place the chosen breakfast meat (bacon or sausage) next to the eggs. Add a small ramekin or dollop (1 teaspoon) of ketchup for dipping and a small serving (1/4 cup) of fresh fruit if using. Let the plate cool slightly before serving to a child.

    Serve immediately. Check temperature of eggs and meat so they are warm but not too hot for a child. Cut larger pieces of sausage or biscuit into bite-sized pieces appropriate for the child's age.
