Prep & cook bacon

    Preheat oven and prepare bacon

    Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if you have one. Arrange the bacon slices in a single layer on the rack or directly on the foil (rack yields crispier bacon).

    Bake the bacon for 12–18 minutes, checking at 12 minutes. Cook until crisp at the edges but still slightly pliable (kids generally prefer not overly hard). Remove from oven and transfer bacon to a plate lined with paper towels to drain. Keep warm in a low oven (200°F / 95°C) if needed.

    If you prefer stovetop bacon: cook slices in a skillet over medium heat 3–4 minutes per side until browned and cooked through. Drain on paper towels.

Make pancake batter

    Combine dry ingredients

    In a medium bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed and aerated.

    Combine wet ingredients

    In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.

    Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or spoon until just combined. Small lumps are fine — do not overmix or the pancakes become tough. Let the batter rest 5 minutes while you heat the pan; this helps the baking powder activate and yields fluffier pancakes.

Cook pancakes

    Heat pan

    Place a nonstick skillet or griddle over medium heat and brush with a little melted butter or lightly oil. The pan is ready when a few drops of water sizzle and dance on the surface.

    Portion batter

    For child-friendly size, use about 3 tablespoons (roughly 1/8 cup) of batter per pancake for small pancakes, or 1/4 cup for standard. Pour batter onto the hot pan leaving space between pancakes.

    Cook first side

    Cook until bubbles form on the surface and the edges look set, about 1.5–2 minutes for small pancakes or 2–3 minutes for larger ones.

    Flip and finish

    Flip each pancake with a spatula and cook the second side until golden brown, another 1–2 minutes. Transfer cooked pancakes to a plate and keep warm in the low oven (200°F / 95°C) while you finish the rest.

    If using bacon bits in pancakes (optional extra): finely chop 2 cooked bacon slices and gently fold into a portion of batter before cooking, then cook as above.

Serve

    Stack pancakes on plates (3–4 small pancakes or 2 larger pancakes per child). Place 1–2 slices of bacon alongside or weave a slice on top for fun presentation.
