Prepare bread
Spread about 1 teaspoon mayonnaise (optional) evenly on the inside of each slice of bread. This adds a little moisture and flavor but can be omitted for picky eaters.

Assemble
Place 1 ounce (about a thin slice or a small handful shredded) of cheddar on two slices of bread, dividing evenly. Top with the remaining two slices, mayo-side down, to form two sandwiches.

Butter and cook
Heat a nonstick skillet or griddle over medium-low to medium heat. Spread 1 tablespoon of softened butter evenly on the outside face of each sandwich (both top and bottom). Place sandwiches in the skillet. Cook 3–4 minutes per side, pressing gently with a spatula and adjusting heat if the bread browns too quickly. Cook until bread is golden-brown and cheese is melted. If cheese needs extra melting without over-browning, lower heat and cover the skillet for 1–2 minutes.

Cut and serve
Remove sandwiches from the skillet and let rest 1 minute. For young children, cut each sandwich into halves or quarters (triangles or sticks) depending on preference and ease of handling.

Preheat oven to 425°F (220°C). Spread frozen fries in a single layer on a baking sheet lined with parchment or a silicone mat. Lightly toss with 1 tablespoon vegetable oil to help browning and sprinkle 1/2 teaspoon salt evenly. Bake 12–18 minutes, flipping once halfway through, until golden and crispy. Adjust time depending on fry thickness.

Stovetop/skillet method
Heat a large nonstick skillet over medium-high heat. Add 1–2 teaspoons oil and a single layer of frozen fries (work in batches if needed). Cook, stirring occasionally, 8–12 minutes until browned and cooked through. Season with remaining salt to taste.

Follow package and equipment instructions for deep frying frozen fries safely. Drain on paper towels and season with salt immediately.

Start fries first if using oven; put in oven, then assemble sandwiches so both are ready at the same time. If using skillet fries, you can cook sandwiches and fries alternately or use two burners.
