Prepare Coffee Base

Brew or use concentrate
Brew 2 cups of very strong coffee. Use a dark-roast blend and brew about double strength (e.g., 2x the grounds) or use 2 cups of cold-brew concentrate. Allow the coffee to cool to warm (not hot).

Toast vanilla bean and lightly crush beans
Split the vanilla bean lengthwise and scrape seeds into the warm coffee. Add the scraped pod as well. Lightly crush the coffee beans with the back of a spoon or in a mortar & pestle to release oils and add them to the coffee.
Make Sugar Syrup and Combine

Dissolve sugars
In a medium saucepan, combine the granulated sugar, dark brown sugar, and 1/4 cup filtered water (if using). Warm over medium-low heat, stirring until both sugars fully dissolve and the mixture is just shy of simmering (do not caramelize). This creates a rich sugar syrup ~5 minutes.

Combine coffee and syrup
Pour the warm sugar syrup into the bowl or pot with the warm coffee, stirring to combine. Taste: the mixture should be noticeably sweet and very coffee-forward. If you want an even thicker or sweeter liqueur, add the optional 1/4 cup simple syrup now.
Add Spirit and Infuse

Add alcohol and optional liqueur
When the coffee-syrup mixture has cooled to room temperature, stir in 2 cups vodka (or a cup each vodka and dark rum for more complexity) and the optional 1/4 cup coffee liqueur if using. Stir to combine thoroughly.

Steep
Store the jar at room temperature, away from direct sunlight, for at least 2 weeks, shaking gently every 2–3 days. For a smoother, more rounded flavor, steep 4–6 weeks. Taste periodically: longer infusion increases intensity and rounds harsh alcohol notes.
Strain, Adjust, and Bottle

Strain solids
After infusing to your desired strength, strain the liqueur through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean vessel to remove vanilla pods and coffee grounds/beans. Repeat filtration if necessary to achieve clarity.

Adjust sweetness & texture
Taste the strained liqueur. If it needs to be sweeter or thicker, add up to 1/4 cup additional simple syrup (1:1 sugar to water), mixing until incorporated. If too strong, dilute with small amounts of filtered water to reach desired alcohol/flavor balance.

Bottle and rest
Decant finished Kahlúa into clean bottles. Seal and let rest 1–3 days to allow flavors to marry before using. Store at room temperature; the liqueur will keep for several months, and flavor will continue to mellow over time.
