Warm your espresso cup and portafilter by rinsing with hot water. Empty and tamp away excess water so the metal is hot but dry.

Make sure your espresso machine is fully warmed up and group pressure and temperature are stable (about 9 bar brewing pressure, 92–96°C / 197–205°F water temperature).
Pulling the espresso

Dose, tamp and extract
Weigh 18 g of freshly ground dark roast espresso (medium-fine grind). Distribute evenly into the portafilter, level, and tamp with approximately 30 lb (13–15 kg) of pressure to create a flat, even puck. Lock the portafilter into the group head and start extraction immediately.

Aim for a 36–40 ml double espresso in 25–30 seconds. If extraction is too fast, tighten the grind; if too slow, coarsen slightly. Stop extraction once you reach the target volume.

Purge the steam wand, then submerge the tip just below the surface and start steaming to introduce microfoam: create a gentle hissing sound for the first 2–4 seconds, then lower the pitcher so the tip is deeper to build temperature without large bubbles.

Add 10 ml vanilla syrup to the warmed espresso cup (or add 2 tsp demerara sugar if you prefer granulated sugar). Pour the freshly extracted espresso over the syrup and gently swirl to dissolve and combine.

Finish with a light dusting of cocoa powder or a few chocolate shavings on top, and, if desired, express a small strip of orange zest over the cup and drop it in as garnish.
