Sauté spinach
In the same skillet over medium heat, add 1 tsp butter. Add 1 cup fresh spinach and 2 tbsp water, season with a pinch (about 1/8 tsp) kosher salt and a pinch of black pepper. Sauté, stirring, 1–2 minutes until just wilted. Remove spinach and drain any excess liquid on a paper towel; set aside.

Slice tomato
While sausages cook, slice tomato into 4 even slices. Lightly season tomato slices with a small pinch of kosher salt (about 1/16 tsp) and a light dusting of lemon pepper seasoning.
Cook egg whites & assemble

Cook egg whites
Wipe skillet if needed and return to low-medium heat. Pour in the 4 egg whites and spread gently into an even layer (or cook in two smaller rounds). Sprinkle the remaining lemon pepper seasoning (about 3/4 tsp) evenly over the egg whites and add the remaining 1/8 tsp kosher salt and 1/8 tsp black pepper. Cook undisturbed 2–3 minutes until edges set. If desired, cover skillet for 30–45 seconds to finish the top. Alternatively, fold into an omelet shape when set.

Add cheese and assemble
Lay 1 slice Swiss cheese over the cooked egg whites so it begins to melt (cover briefly if needed). Arrange the wilted spinach evenly over the cheese, then place the two halved turkey sausage pieces on top. Top with the 4 seasoned tomato slices. Using a spatula, fold the egg whites (or fold the omelet) to enclose ingredients, or transfer components to sandwich bread/English muffin if preferred.
