Method

Preparation (per 2 servings or 2 flutes)

    Chill and prepare glassware

    Place flutes or stemmed glasses in the refrigerator for at least 10 minutes, or fill them briefly with ice water while preparing ingredients. If serving in a pitcher, chill the pitcher and keep extra sparkling wine cold.

    Measure juices

    For two servings, pour 1/2 cup of the chosen juice (orange, grapefruit, pineapple, or cranberry) into a small measuring cup or carafe. If making two different flavor mimosas, measure 1/4 cup of two juices accordingly (for example, 1/4 cup OJ + 1/4 cup pineapple for a blended flavor).

    Optional: prepare seasonal purée

    If using a seasonal purée (peach, mango, or blood orange), stir or thin 2 teaspoons of purée with a splash (about 1 tsp) of the chosen juice so it incorporates smoothly into the glass rather than sinking to the bottom.

    Make a Sunrise mimosa

    For the sunrise (OJ & grenadine) pour 1/2 cup orange juice into the flute and carefully add 1 tablespoon grenadine down the inside of the glass — the grenadine will sink and create a gradient. Do not stir.

    Combine sparkling wine

    Hold the chilled sparkling wine at a slight angle and slowly top each flute with 1/2 cup (approximately) of sparkling wine. Pour gently to preserve bubbles and minimize foam. For best proportions, use roughly equal parts juice and sparkling wine (1:1).

    Assemble other flavors

    For grapefruit, pineapple, or cranberry mimosas: place 1/2 cup chosen juice in the flute, then top slowly with 1/2 cup sparkling wine. If you thinned seasonal purée, spoon it into the bottom of the flute before adding juice and wine so it disperses visually.

    Garnish and serve

    Garnish each flute with the corresponding fruit: orange wheel for OJ, grapefruit twist for grapefruit, pineapple wedge for pineapple, and a few cranberries or a mint sprig for cranberry. Serve immediately while bubbles are active.

    Pitcher method (serves 6–8)

    For a larger batch, in a chilled pitcher combine 3 cups of your chosen juice (or a mix of juices) with 3 cups chilled sparkling wine. If making sunrise for a pitcher, add grenadine individually to each glass rather than the pitcher to preserve the layered effect. Keep chilled and pour into chilled flutes when ready.
