Base vodkas (infused)

Method

Base vodkas (infused)

  1. 1

    Overview

Prepare six different small-batch infused vodkas ahead of service. Each infusion makes approximately 1 cup (240 ml) — enough for the recipes below. Infuse at least 24 hours for bright flavors; up to 72 hours for stronger heat/aroma. Strain before using and store refrigerated.

  2. 2

    Lemon-infused vodka

Zest 2 medium lemons (avoid white pith), place zest into 1 cup neutral vodka, seal and steep 24–48 hours at room temperature. Taste after 24 hours; when lemon aroma is present, strain through fine mesh or cheesecloth into clean bottle.

  3. 3

    Garden-infused vodka (Proud Mary)

Use a small handful total of fresh herbs (about 2 sprigs thyme, 2 sprigs basil, 2 tbsp chopped parsley) washed and dried. Bruise herbs slightly, add to 1 cup vodka, steep 24–48 hours. Strain out herbs and chill.

  4. 4

    Horseradish-infused vodka (Horsey Mary)

Grate 1–2 tbsp fresh horseradish root or use 1 tbsp prepared horseradish, combine with 1 cup vodka, steep 12–24 hours (horseradish can overpower quickly). Taste and strain; keep refrigerated.

  5. 5

    Jalapeño-infused vodka (Hot Mary)

Slice 1 medium jalapeño (seeds removed for milder heat or left in for more), add to 1 cup vodka, steep 24–48 hours, tasting periodically. Strain and refrigerate.

  6. 6

    Habanero-infused vodka (Hotter Mary)

Use one small habanero (handle with gloves), slice and add to 1 cup vodka, steep 12–36 hours depending on desired heat. Habaneros infuse faster and are much hotter than jalapeño. Strain carefully.

  7. 7

    Carolina Reaper-infused vodka (Hottest Mary)

Use extreme caution and gloves. Use a very small piece (1/8 to 1/4 pepper) or a split seed, add to 1 cup vodka and steep 2–12 hours—check extremely frequently. This will be extremely hot; strain and label clearly.

Bloody Mary mix (per 6 cocktails)

  1. 8

In a large pitcher or mixing vessel combine 8 cups tomato juice, 3 tablespoons fresh lemon juice, 3 tablespoons Worcestershire sauce, 2 teaspoons prepared horseradish, 1 tablespoon hot sauce, 2 teaspoons celery salt, 2 teaspoons coarse ground black pepper, 1 teaspoon smoked paprika, and 2 tablespoons olive or pickle brine (if using). Whisk vigorously until uniform. Taste and adjust acidity (more lemon), salt (celery salt or brine), or heat (hot sauce/horseradish) to preference.

  2. 9

Keep the mix chilled. This batch yields roughly six 8-oz (240 ml) cocktail portions when combined with vodka and ice.

Garnishes & serving (build each cocktail)

  1. 10

    Rim the glass

On a small plate combine 1/2 cup coarse kosher salt and 2 teaspoons coarse black pepper. Rub a lemon or lime wedge around the glass rim, then dip the rim into the salt/pepper mixture to coat. Set glasses aside.

  2. 11

To make one 8-oz Bloody Mary (serves 1)

Fill a highball or pint glass with 1 cup ice (about 1 cup by volume). Add 1.5 ounces (approx 3 tablespoons or 0.1875 cups) of the chosen infused vodka (use the appropriate infusion per menu: Lemon Mary = lemon vodka, Proud Mary = garden vodka, Horsey Mary = horseradish vodka, Hot Mary = jalapeño vodka, Hotter Mary = habanero vodka, Hottest Mary = Carolina Reaper vodka). Pour in 4 ounces (1/2 cup) of the prepared Bloody Mary mix. Stir gently to combine. Taste and adjust with additional lemon juice, hot sauce, or a dash of celery bitters if desired.

  3. 12

    Garnish

Garnish each cocktail with a celery stalk and a lemon wedge. Optionally thread olives, cherry tomato and pickle onto cocktail picks and perch on top. For Horsey Mary, add an extra small spoonful (1/4 tsp) of prepared horseradish on the side or a thin smear on the rim. For Lemon Mary, express a lemon wedge over the drink and drop it in. For hot versions, place a thin slice of the same chili used for infusion as a visual cue and/or float one small dash of the infusion pepper in the drink.

  4. 13

    Batch service (per 6 cocktails)

In a pitcher combine 9 ounces (1 1/8 cups) of chosen infused vodka (1.5 oz x 6 = 9 oz) with the full pitcher of Bloody Mary mix (8 cups). Add ice to the serving pitcher or individual glasses when serving. Stir to combine and serve immediately with garnishes prepared.

  5. 14

    Safety & labeling

Label the infused vodkas clearly for heat level. Warn guests that Hottest Mary (Carolina Reaper) is extremely spicy and should be consumed cautiously. Keep infused bottles refrigerated and use within 2 weeks for best flavor and safety.
