Omelette Base
Whisk eggs
Crack 3 large eggs into a medium bowl. Add 2 tbsp whole milk, 1 tsp salt, and 1/4 tsp freshly ground black pepper. Whisk vigorously until mixture is uniform and slightly frothy, about 30 seconds.
Preheat pan
Place a nonstick skillet (8–10 inch) over medium-low heat and add 1 tbsp unsalted butter. Allow butter to melt and foam but not brown, about 1 minute.
Cook eggs
Pour the whisked eggs into the pan. Let them sit undisturbed for 10–15 seconds until edges begin to set. Using a heatproof spatula, gently push set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue until eggs are mostly set but still slightly moist on top, about 1–2 minutes total.
Filling & Topping
Prepare vegetables and cheese
While eggs rest, finely dice 1/4 small yellow onion (about 2 tbsp) and 1/2 medium tomato (about 3 tbsp), and thinly slice or cube 1 oz Swiss cheese. Halve 1/2 ripe avocado, remove pit, and scoop out flesh. Slice avocado into thin slices or small cubes. If using cilantro, roughly chop 1 tbsp.
Sauté onion and tomato (optional)
In a small skillet over medium heat, add 1 tsp olive oil. Add diced onion and sauté until translucent, about 2–3 minutes. Add diced tomato and cook 30–60 seconds just to warm and release juices. Remove from heat and drain briefly on a paper towel if very wet. (You can skip sautéing and use vegetables raw if preferred.)
Add filling to omelette
When the omelette is mostly set with a slightly moist surface, arrange the Swiss cheese evenly over one half of the omelette (center toward hinge). Spoon the sautéed (or raw) onion and tomato over the cheese, then arrange avocado slices on top. Sprinkle chopped cilantro if using.
Fold and finish
Using the spatula, carefully fold the empty half of the omelette over the filled half to form a semicircle. Let cook for another 30–60 seconds to melt the cheese and warm the filling. If you prefer a firmer set, cover the skillet briefly for 30 seconds.
