Prepare and blanch bones
Place the beef soup bones and brisket in a large stockpot and cover with cold water. Bring to a rolling boil over high heat and boil for 8 minutes to remove impurities. Drain the pot and thoroughly rinse the bones and meat under running water, scrubbing off coagulated proteins. Clean the pot.
Simmer clear broth
Return the cleaned bones and brisket to the stockpot. Add 6 liters of fresh water, halved onion, crushed garlic, smashed ginger, and daikon if using. Bring to a boil, then immediately reduce to a bare simmer. Skim any foam occasionally. Simmer gently, uncovered or partially covered, for 4 to 6 hours until the broth is milky and rich (longer for deeper flavor). Add kosher salt halfway through simmering and adjust at the end.
Strain and reserve
When the broth is rich and milky, remove large solids (discard onion, ginger, daikon). Strain the broth through a fine mesh sieve or cheesecloth into a clean pot. Reserve the brisket from the bones, cool slightly, and slice thinly against the grain for serving. Keep broth hot on low heat.

Clean and blanch tripe
While the broth simmers, prepare the honeycomb tripe: rinse under cold water. In a separate pot, bring water to a boil, add 1 tsp coarse salt and the tripe. Blanch for 5 minutes to remove surface impurities. Drain and rinse tripe under cold water. Use a paring knife to remove any tough bits and slice the tripe into 1/2-inch wide strips or bite-sized pieces.
Cook tripe in the broth
Add the blanched tripe strips to the strained hot broth. Simmer gently for 40–60 minutes until tender but with a slight chew (timing depends on thickness). Taste and adjust seasoning. If using additional brisket slices, warm them in the broth for 2–3 minutes just before serving.
Seasoning & Condiments
Season the soup
To the hot broth with tripe (and sliced brisket if added), stir in 1 tablespoon fish sauce (or anchovy stock) and 1 teaspoon soy sauce and 1 teaspoon sesame oil. Add 1 teaspoon coarse ground black pepper and 1 teaspoon gochugaru, tasting as you go. Adjust with up to 1 additional tablespoon salt or fish sauce as needed. Keep soup hot but not boiling.

Prepare garnishes
Thinly slice green onions, mince the garlic for garnish, and toast sesame seeds if using. Have cooked short-grain rice ready and warmed for gukbap bowls.
Assemble gukbap bowls
Divide 3 cups of cooked rice into 4 bowls (about 3/4 cup per bowl). Arrange sliced brisket and a generous portion of tripe over the rice. Ladle the piping-hot broth over rice and meats until bowls are nearly full. Sprinkle sliced green onions, minced garlic, toasted sesame seeds, and a pinch of finishing sea salt on top. Serve additional gochugaru, black pepper, and fish sauce at the table for individual adjustment. Offer kimchi or julienned napa cabbage on the side.
