Rinse the short-grain rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Prepare the Rice

In a rice cooker, add the rinsed rice and 1 1/4 cups of water. Cook according to the rice cooker instructions. Once done, let it sit for 10 minutes before fluffing with a fork.

Cook the Rice

In a large mixing bowl, combine the Junmai sake, 200 ml of water, citrus zest, and mirin. Stir gently to mix.

Mix the Ingredients

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to chill.

Chill the Mixture

In a serving glass, add a scoop of the steamed rice at the bottom. Pour the chilled sake mixture over the rice and enjoy.
