Method
Preparation
- 1
Prepare papaya
Peel the papaya, cut it in half lengthwise, scoop out and discard the seeds, then chop the flesh into 1-inch pieces until you have about 2 cups packed.
- 2
Measure and chill
Measure 1 cup yogurt and 1 cup milk. If you prefer a colder, thicker smoothie, chill the yogurt and milk in the refrigerator before blending or use partially frozen papaya and ice.
Blend
- 3
Place the chopped papaya (2 cups), 1 cup yogurt, 1 cup milk, 1 tablespoon honey (or agave), 1 teaspoon fresh lime juice, and 1/2 teaspoon vanilla extract (if using) into a blender.
- 4
Add the ice cubes (1 cup) to the blender. If you prefer a thinner smoothie, start with 1/2 cup ice and add more after blending to reach desired consistency.
- 5
Secure the blender lid and blend on high for 45–60 seconds, or until the mixture is completely smooth and creamy. If the smoothie is too thick, add 2 tablespoons of milk at a time and pulse to combine until you reach the desired texture.
- 6
Taste the smoothie and adjust sweetness or acidity: add up to 1 additional teaspoon honey if you want it sweeter, or a few more drops of lime juice to brighten the flavor. Blend for an additional 5–10 seconds after adjusting.
Serve
- 7
Pour the papaya smoothie into two tall glasses (approximately 12 oz each).
- 8
Garnish each glass with 2 mint leaves and a lime wedge on the rim, if desired.
- 9
Serve immediately for best texture and flavor.
