Boil water
Place 4 cups of water in a medium saucepan and bring to a rolling boil over high heat. Add 1 tablespoon coarse kosher salt to the boiling water (this seasons the beans and helps them stay bright green).

Cook edamame
Add 2 cups frozen edamame (shelled or in pods) to the boiling salted water. If using pods, push them into the water so they're submerged. Return to a gentle boil and cook for 3–5 minutes for shelled edamame or 4–6 minutes for edamame in pods, until the beans are tender and bright green but still slightly firm. Taste one to check doneness.

Drain and shock
Immediately drain the edamame in a colander and, if you want to stop cooking quickly and preserve color, rinse briefly under cold running water or plunge into an ice bath for 30–60 seconds. Drain thoroughly.
Seasoning & Serving

Basic seasoning
While the edamame are still slightly warm, transfer to a bowl and toss with 1 teaspoon sea salt or flaky finishing salt to taste.

Optional flavored edamame
For a dressed version, toss the warm drained edamame with 1 teaspoon sesame oil, 1 teaspoon soy sauce, 1 teaspoon fresh lime juice and 1 teaspoon chili flakes (or 1 teaspoon shichimi). Adjust quantities to taste and toss until evenly coated.

Serve
Serve immediately as a snack or appetizer. If using pods, provide a small bowl for discarded pods. If shelled, serve in a small bowl as a finger-food or salad topper.
