Prep the aromatics

Peel and finely grate or mince enough yellow onion to measure 1/2 cup. Mince the garlic to yield about 2 teaspoons.

Combine ingredients

In a large bowl, add 1 lb ground turkey, 1/2 cup panko, 1 beaten large egg, the grated onion, 2 tsp minced garlic, 1 tbsp Worcestershire sauce, 1 tsp Dijon mustard, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Gently mix with clean hands or a spatula until just combined. Avoid overworking to keep patties tender.

Portion and shape

Divide the mixture into 4 equal portions (about 4 oz / 113 g each). Lightly wet your hands and form each portion into a round patty about 3/4 inch thick, pressing a slight indentation in the center of each patty to prevent puffing during cooking.

Chill briefly (optional)

Place shaped patties on a tray and refrigerate for 15–20 minutes if time allows — this helps them hold together while cooking.

Cook the patties

Heat a large skillet or grill pan over medium-high heat and add 1 tbsp olive oil. When shimmering, add patties in a single layer without crowding. Cook 4–5 minutes on the first side until a golden crust forms. Flip and cook an additional 4–5 minutes until the internal temperature reaches 165°F (74°C). If using cheese, place a slice on each patty during the last minute of cooking and cover the pan to melt.

Rest patties

Transfer cooked patties to a plate and let rest for 3–5 minutes before assembling to retain juices.

Toast buns

While patties rest, split the buns and toast cut sides in a skillet, under a broiler, or on the grill for 1–2 minutes until lightly browned. You may butter the cut sides if desired.

Prepare sauce

In a small bowl, combine 1/4 cup mayonnaise, 2 tbsp ketchup, and 1 tsp yellow mustard. Stir until smooth. Taste and adjust seasoning or proportions to preference.

Assemble burgers

Spread sauce on both halves of each toasted bun. On the bottom bun, place a lettuce leaf, then the turkey patty with melted cheese, followed by a tomato slice and a few red onion slices. Top with the bun crown.

Serve

Serve immediately with optional sides (fries, salad, pickles). Leftover patties refrigerate up to 3 days.
