Prepare Glass & Garnish
Chill glass
Place a stemmed wine glass or large tulip glass in the freezer for 5–10 minutes or fill briefly with ice water while you prepare ingredients to ensure the drink stays cold.
Mint prep
Gently clap or slap the mint leaves between your palms once to wake up the aroma—do not muddle aggressively, which can cause bitterness.
Build the Drink
Add ice: Fill the chilled glass with large ice cubes or a single large ice sphere to the top. Large ice slows dilution and keeps the spritz crisp.
Pour limoncello and lemon: Measure and pour 2 tablespoons (about 1 oz) chilled limoncello into the glass, then add 1/2 tablespoon fresh lemon juice for brightness.
Adjust sweetness (optional): If you prefer a slightly sweeter spritz, add 1/2 teaspoon simple syrup. Stir gently once to combine limoncello, lemon juice, and syrup without flattening the bubbles later.
Add sparkling wine: Slowly pour 3 ounces chilled sparkling wine (Prosecco or dry Cava) down the side of the glass to preserve effervescence. Pouring gently reduces foaming.
Top with soda: Add 1 ounce chilled club soda to top the drink and lift the aromatics. Give the drink one gentle stir (about 3 turns) to integrate layers while keeping bubbles.
Garnish and finish: Nestle 3–4 mint leaves against the rim or float them on top and add the lemon wheel or twist on the glass edge. Serve immediately with a short straw if desired.
