Prepare and combine

Chill a coupe or martini glass by filling it with ice water and set aside. In a cocktail shaker without ice (dry shake), add 2 oz vodka, 3 tsp fresh lemon juice (about 1/2 a lemon), 1 tsp triple sec, 1/2 tbs simple syrup, and 1 egg white (or aquafaba).

Dry shake

Seal the shaker and dry shake vigorously for 15–20 seconds to emulsify the egg white and incorporate air, creating a frothy texture.

Wet shake

Open the shaker, add a large handful of ice, reseal, and shake hard for 10–12 seconds to chill and slightly dilute the cocktail. Strain the mixture through a fine mesh strainer into the chilled coupe glass.

Fee Foam Topping

Make the foam

In a small mixing glass or jar, combine 0.75 tsp Fee Foam concentrate with 0.5 oz cold water. Stir gently to combine. If using a hand frother or small milk frother, froth the mixture for 10–15 seconds to build a stable foam. Alternatively, shake vigorously in a small sealed jar for 10–15 seconds.

Top the cocktail

Carefully spoon or pour the Fee foam over the surface of the strained cocktail to create a distinct white foam layer. The foam should sit on top of the drink.

Garnish & Finish

Twist a lemon peel over the foam to express oils, rim the glass with the peel and place the twist on the foam. Lightly grate a small amount of lemon zest over the foam if using. Serve immediately.
