Method
Prep Shrimp
Clean and season
Pat the shrimp very dry with paper towels. In a medium bowl toss the shrimp with 1 tablespoon olive oil, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, minced garlic, and 1 tablespoon lemon juice until evenly coated. Let sit 10 minutes at room temperature while you preheat the grill or skillet.
Make Old Bay Butter Sauce
Melt butter and flavor
In a small saucepan over low heat, melt 4 tablespoons unsalted butter. Stir in 1 teaspoon Old Bay seasoning, 1/4 teaspoon smoked paprika, and the lemon zest. Cook gently 1–2 minutes to bloom the spices—do not let the butter brown.
Add acid and herbs: Remove the pan from the heat and stir in 1 tablespoon lemon juice, 2 tablespoons finely chopped parsley, and 1/2 teaspoon hot sauce if using. Taste and adjust seasoning with salt and black pepper to taste. Keep warm on the lowest heat or transfer to a small warmed bowl.
Grill Shrimp
Preheat
Preheat an outdoor grill or a grill pan to medium-high (about 400°F / 200°C). Oil the grates or pan lightly.
Skewer (optional)
If using wooden skewers, soak them 20–30 minutes in water and thread 4–6 shrimp per skewer, or you can grill them individually.
Grill
Place shrimp on the hot grill or grill pan in a single layer. Cook 1.5–2 minutes per side until opaque and slightly charred at the edges (internal temperature about 120–125°F for medium to firm shrimp). Do not overcook—shrimp will become rubbery.
