Chill and prepare caviar

Place crushed ice into the nonreactive serving bowl to create a bed. Nest the caviar tin or jar on the ice so it sits cold but not submerged. Keep caviar refrigerated until just before serving. Transfer caviar to a small chilled serving dish when ready, using a nonreactive spoon if you wish to portion (mother of pearl recommended).

Prepare crème fraîche mixture

In a small bowl, combine crème fraîche with the finely minced shallot, 1 tablespoon finely snipped chives, 1/4 teaspoon fine sea salt, and 1/8 teaspoon freshly ground black pepper. Taste and adjust — crème fraîche should be tangy and lightly seasoned. Cover and keep chilled until service.

Prepare quail eggs

Place quail eggs in a small pot and cover with cold water by 1 inch. Bring to a gentle boil, then immediately remove from heat, cover, and let sit 3 minutes for hard‑boiled yolks. Transfer eggs to an ice bath for 3 minutes to stop cooking. Peel carefully and cut in half lengthwise. Reserve the halves on a chilled plate; you can place a small dollop (about 1/2 tsp) of crème fraîche on each yolk half and top with a small spoonful (about 1/2 tsp) of caviar at service.

Prepare thin cucumber slices

Using a mandoline or sharp knife, thinly slice the seeded cucumber into rounds. Pat dry on paper towel to remove excess moisture so slices remain crisp when served under caviar.

Final seasoning

Finely chop remaining chives. Keep a small pinch of sea salt and black pepper available for guests to use sparingly. Cut lemon into wedges and place on a small dish; advise guests to only use a whisper of lemon — too much will overwhelm the caviar.

Toast brioche

Preheat oven to 350°F (175°C). Lightly butter the brioche slices on one side with softened unsalted butter. Arrange buttered side up on a sheet pan and toast 6–8 minutes until edges are golden and slightly crisp. Keep warm wrapped in a clean towel until service.

Warm blinis (if using chilled)

If blinis are chilled, reheat briefly in a dry skillet over medium heat 30–45 seconds per side until warm and slightly puffy, or warm in a 300°F (150°C) oven for 5–7 minutes. Do not overheat — they should be warm but tender. Stack and cover lightly to keep them soft.

Arrange accompaniments

On a serving platter, arrange warm blinis, toasted brioche, thin cucumber rounds, and plain kettle chips in separate piles so guests can choose. Place small bowls with the crème fraîche mixture, minced chives, minced shallot, lemon wedges, and quail egg halves nearby. Provide small mother‑of‑pearl spoons for the caviar and separate small spoons for crème fraîche.

Portioning and etiquette

To serve, spoon small portions of caviar (about 1/2–3/4 teaspoon per serving) onto a blini or slice of brioche already spread with a thin smear of crème fraîche, or onto a cucumber round or quail egg half. Use sparingly — paddlefish caviar is best appreciated in small amounts to savor its texture and flavor. Advise guests to eat in one bite if possible.

Plating for 6

For a party of 6, portion the 4 oz of caviar into 6 equal servings (~2/3 oz / 20 g each). Provide 3 blinis and 2 brioche pieces per person, plus chips and cucumber rounds. Place the caviar service bowl on the table with spoons, and keep extra ice available to maintain chill.

Storage after serving

Return unused caviar to its original tin, cover, and keep refrigerated at 28–32°F (-2 to 0°C) if possible. Consume remaining caviar within 2–3 days for best quality. Discard if left at room temperature more than 2 hours.
