Preheat oven to 350°F (175°C) if you prefer oven-warmed fondue; otherwise prepare a small fondue pot or a small saucepan over low heat for stovetop melting.

If using a whole wheel of Brie, slice off the top rind (optional) and score the rind lightly to help even melting. If using a block, cut into 1-inch cubes so cheese melts evenly.

Pit and halve fresh black cherries if using. Chop nuts and toast briefly in a dry skillet over medium heat until fragrant (about 2–3 minutes). Prepare dippers: slice and toast baguette, wash fruit.

Melting the Brie

Low-and-Slow Melt

In a small heavy-bottomed saucepan or in the bowl of a small fondue pot set over low heat, melt the butter until foaming (about 30 seconds). Add minced garlic and cook 20–30 seconds until fragrant, taking care not to brown it.

Add the white wine and lemon juice and bring to a gentle simmer for 30 seconds to meld flavors and reduce harsh alcohol. Keep the heat low—fondue must not boil.

Gradually add the Brie in batches, stirring constantly with a silicone spatula or wooden spoon. As the cheese softens, add the heavy cream to create a smooth texture. Continue stirring until fully melted and silky, about 4–6 minutes total.

Once melted, stir in the grated Parmesan to stabilize and add umami. Taste and season with sea salt and freshly ground black pepper (start with ½ tsp salt if unsure and adjust).

Finishing Flavors

Remove the melted Brie from direct heat (or lower the fondue pot heat). Swirl in the black cherry balsamic vinegar and stir gently to incorporate. If using cherry preserves instead of fresh, add 1–2 teaspoons and stir until smooth; reserve a small spoonful for swiping on dippers if desired.

Fold in half of the toasted nuts and half of the cherries (or preserves) so some are inside the fondue and some remain for topping. If using fresh thyme, stir in the leaves now.

Transfer to a warmed fondue pot or an oven-safe shallow dish kept warm in the oven at low temperature (about 200°F / 95°C) until ready to serve. If using a fondue pot, keep on low flame to maintain a gentle melt—avoid boiling.

Serve & Garnish

Spoon the fondue into a serving bowl or keep it in the fondue pot. Drizzle a little extra black cherry balsamic on top (about ½–1 tsp) for a glossy finish.

Scatter the remaining toasted nuts and fresh cherries over the surface. Add a crack of black pepper and a few thyme leaves for color and aroma.

Arrange toasted baguette slices, apple slices and grapes around the fondue. Encourage guests to spear dippers with fondue forks or small skewers and swirl in the Brie, rewarming briefly if the cheese firms up.

If the fondue becomes too thick while serving, gently rewarm over very low heat and stir in 1 teaspoon of cream or wine at a time until desired consistency is reached.
