Prepare and bake
Preheat the oven to 375°F (190°C). Line a small baking sheet or an oven-safe shallow dish with parchment paper. Pat the Brie wheel dry with paper towels. Using a sharp knife, score a shallow grid (about 1/8" deep) across the top rind to help flavors penetrate and to encourage even melting. Spread the butter evenly across the top of the wheel, then sprinkle with thyme, sea salt, and coarse black pepper.
Place the Brie on the prepared sheet and bake for 12–15 minutes, until the center is soft and the top is lightly golden but the cheese still holds its shape. If you prefer a runnier center, bake an additional 2–4 minutes, checking every minute. Remove from oven and transfer to a heatproof serving board or shallow bowl. Keep warm while finishing the compote (tent loosely with foil if needed).
Black Cherry Balsamic Compote
Cook cherries
While the Brie bakes, combine the black cherries, balsamic vinegar, brown sugar, honey, lemon juice, orange zest, cinnamon, and vanilla in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer.
Simmer uncovered for 8–10 minutes, stirring occasionally, until the cherries soften and the liquid reduces and thickens slightly.
Thicken and finish
In a small bowl, whisk the cornstarch into the cold water to make a slurry. Stir the slurry into the simmering cherries and continue cooking for 1–2 minutes until the compote thickens to a spoonable consistency. Taste and adjust sweetness or acidity (add a little more honey or balsamic, as preferred). Remove from heat and let cool slightly—the compote will thicken further as it cools.
Spoon the warm black cherry balsamic compote over the center and top of the baked Brie just before serving, or serve alongside in a small bowl for guests to add to their portion.
Fruit & Accompaniments
While the compote finishes, prepare the fresh fruit and toasts. Core and thinly slice the green apple and arrange on a platter with the red grapes and halved dried apricots. Toast the baguette slices until golden and crisp (about 6–8 minutes at 350°F/175°C or using a broiler for 1–2 minutes per side), then let cool slightly.
To serve: spoon additional compote over individual pieces of Brie as you pull melted cheese with bread or fruit. Enjoy warm.
