Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Discard any mussels that are open and do not close when tapped.

Prepare the Broth

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Wine and Saffron

Pour in the white wine and add the saffron threads. Bring the mixture to a simmer.

Cook the Mussels

Add the cleaned mussels to the pot, cover it with a lid, and cook for 5-7 minutes until the mussels open. Discard any that remain closed.

Season and Garnish

Season with salt and black pepper to taste. Stir in chopped parsley just before serving.

Serve the mussels hot with grilled bread on the side for dipping into the broth.
