Make the meringue
Preheat oven to 275°F (135°C). Line a baking sheet with parchment and draw a 8–9 inch circle as a guide. Ensure mixing bowl and beaters are scrupulously clean and dry. Place egg whites in bowl and beat on medium speed until soft peaks form.

Gradually add the sugar, one tablespoon at a time, while continuing to beat. After all sugar is added, increase speed to high and beat until stiff, glossy peaks form and sugar is fully dissolved (rub a small amount between fingers to check — should feel smooth).

Gently fold in cornstarch, vinegar (or lemon juice), and vanilla extract with a rubber spatula, taking care not to deflate the whites.

Spoon meringue onto the parchment within the circle, shaping into a nest with a slightly higher rim and a shallow center for filling. Smooth edges and center. Reduce oven to 250°F (120°C) and immediately place pavlova in oven. Bake 1 hour 15 minutes to 1 hour 25 minutes until the exterior is dry and slightly crisp. Turn oven off and let pavlova cool inside the oven with the door closed or slightly ajar for at least 1 hour to prevent cracking.

Prepare the toppings
While pavlova cools, whip the chilled heavy cream with powdered sugar and 1/2 teaspoon vanilla until soft peaks form. Chill until ready to assemble. Toss mixed berries lightly with grated lemon zest (if using) and 1 tablespoon of sugar or honey if berries are very tart. Slice larger strawberries.

When pavlova is completely cool, transfer to serving plate. Spoon lemon curd into the center, spread gently. Top with a generous dollop of whipped cream and arrange mixed berries over the cream. Garnish with fresh mint leaves and additional lemon zest if desired. Serve immediately — pavlova is best the day it is made.
Honey Yogurt Fruit Cups

In a medium bowl, whisk together Greek yogurt, 2 tablespoons honey, and 1/2 teaspoon vanilla until smooth and slightly aerated. Taste and add remaining honey if you prefer sweeter.

Layer 4 serving glasses or jars: start with 1–2 tablespoons of yogurt, then a spoonful of granola, a layer of mixed seasonal fruit, and a sprinkle of toasted nuts. Repeat to fill the glasses, finishing with fruit and a drizzle of honey on top.

Garnish with additional granola or a few whole berries and a pinch of citrus zest if using. Serve immediately to keep granola crunchy, or refrigerate uncovered for up to 2 hours if necessary. If storing longer, keep granola separate until serving.
Coconut Lime Sorbet (no-churn)

Make simple syrup (if you don't have ready syrup)
Combine 1/2 cup sugar with 1/2 cup water in a small saucepan. Heat gently, stirring until sugar dissolves. Cool completely. This yields about 1/2 cup simple syrup; increase proportionally if needed.

In a bowl, whisk together well-shaken coconut milk, 3/4 cup cooled simple syrup, fresh lime juice, lime zest, and a pinch of salt until homogenous. Taste and adjust sweetness or acidity.

Alternatively, if you have an ice-cream maker, churn according to manufacturer instructions and freeze until firm, about 1–2 hours.

Before serving, let sorbet sit 5–10 minutes at room temperature to soften slightly. Scoop into small bowls and top with toasted shredded coconut if desired.
