    Combine and season

    Place the ground beef, ground pork, and ground veal in a large bowl. Add kosher salt, black pepper, garlic powder, Worcestershire sauce, and any optional add-ins you choose (smoked paprika, parsley, red pepper flakes). Use your hands to gently mix until ingredients are just combined — do not overwork the meat, about 20–30 seconds of folding.

    Form patties

    Divide the blended meat into one 8-ounce portion (or two smaller patties if you prefer). Lightly shape into a round patty about 3/4 to 1 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent doming during cooking.

    Chill briefly (optional)

    For easier handling and better sear, chill formed patties on a plate in the refrigerator for 15–20 minutes. If short on time you can cook immediately.

    Preheat pan or grill

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot (2–4 minutes). If using a grill, preheat to medium-high (about 400–450°F / 200–230°C). Add 1 tablespoon neutral oil to the pan and swirl to coat.

    Cook patties

    Place the patty in the hot pan and cook undisturbed for 3–4 minutes to develop a deep brown crust. Flip once and immediately add a slice of cheese on top. Cook another 3–4 minutes for medium doneness (internal temperature ~145–150°F). Adjust times for thicker or thinner patties and desired doneness. If using a grill, cook similarly over direct heat.

    Rest

    Transfer the cooked patty to a warm plate and let rest for 3–5 minutes to allow juices to redistribute while you toast the bun.

    Toast the buns

    Spread softened butter on the cut sides of the bun. In a small skillet over medium heat (or on the grill grates), toast cut sides until golden brown, 1–2 minutes.

    Spread burger sauce on the bottom bun. Place leaf lettuce, then the rested three-meat patty with melted cheese. Top with tomato slices, red onion rings, and pickles. Spread a little sauce on the top bun and close the burger.
