Sweat aromatics
In a medium saucepan over medium heat, melt 2 tablespoons unsalted butter. Add the finely diced onion and a pinch of salt; cook, stirring occasionally, until the onion is soft and translucent, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown it.

Deglaze and combine
Increase heat to medium-high and pour in 1/2 cup apple cider vinegar to deglaze the pan, scraping up any browned bits with a wooden spoon. Let the vinegar reduce for 1–2 minutes, then stir in 1 1/2 cups ketchup, 3/4 cup packed brown sugar, 1/4 cup bourbon, 2 tablespoons Worcestershire sauce, 1 tablespoon Dijon mustard, and 1 tablespoon molasses. Stir to combine thoroughly.

Season and simmer
Add 1 teaspoon smoked paprika, 1/2 teaspoon ground black pepper, 1 teaspoon kosher salt, and 1 teaspoon hot sauce if using. Bring the mixture to a gentle simmer, then reduce heat to low. Simmer uncovered, stirring occasionally, for 15–20 minutes so flavors meld and the sauce thickens slightly. If the sauce appears too thin, simmer a few minutes longer; if too thick, add up to 1–2 tablespoons water or apple cider vinegar to reach desired consistency.

Optional bourbon flame-off
If you prefer to burn off more of the alcohol aroma, remove the pan from heat, carefully add the 1/4 cup bourbon, then return to heat and tilt the pan away from you to ignite with a long lighter (optional and only if experienced). Let flames subside, then return to simmer. Alternatively, stir bourbon in during the deglaze step without igniting.

Once the sauce has reduced and tastes balanced, remove from heat. For a glossier, slightly richer finish, whisk in 1 tablespoon cold butter pieces until melted and incorporated. Taste and add 1 teaspoon fresh lemon juice or additional apple cider vinegar if it needs brightness. Adjust salt and hot sauce to taste.

Let the sauce cool to warm before using. Use immediately as a glaze for grilled meats, a finishing sauce brushed on in the last 5–10 minutes of cooking, or store in a sterilized jar in the refrigerator for up to 2 weeks. Reheat gently before using.
