Beef patties
Bring meat to temperature
Remove ground beef from the refrigerator 15–20 minutes before cooking so it comes closer to room temperature. This promotes even cooking.
Form patties
Divide the 1 lb ground beef into 4 equal portions (about 4 ounces/113 g each). Gently form each portion into a round patty about 3.5–4 inches (9–10 cm) across and roughly 3/4 inch (2 cm) thick. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.
Cook patties
Heat a large skillet or cast-iron pan over medium-high heat until very hot, about 3–4 minutes. Add a thin film of oil. Place patties into the pan leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip once and cook 2–3 minutes for medium, or until internal temperature reaches 160°F (71°C) for well-done per USDA guidance. If using cheese, place a slice on each patty during the last 30–60 seconds and cover the pan to melt.
Transfer cooked patties to a plate and tent loosely with foil to rest for 2–3 minutes while you prepare buns and assemble.

While patties cook, slice the tomato into 1/4-inch (6 mm) rounds. Thinly slice the red onion into rings. Wash and dry lettuce leaves. Set out pickle slices.
Assemble burgers
On the bottom bun, spread 1 tsp mayonnaise. Add a lettuce leaf, then a cooked beef patty with melted cheese. Top the patty with 2 pickle slices, a tomato slice, and a few red onion rings. Drizzle 1 tsp ketchup and 1 tsp mustard over the tomato or spread on the top bun, as preferred. Place the top bun on the burger.
Serve
Serve immediately while hot, with optional sides such as fries, chips, or a small salad. Leftover patties can be refrigerated and eaten within 2 days.
