Burger patties
Form patties
Divide the ground beef into 4 equal portions (about 4 oz / 115 g each). Gently form each portion into a patty about 3/4 inch thick and roughly the diameter of the buns. Handle meat lightly—overworking makes tough burgers. Make a shallow 1/2-inch wide indentation in the center of each patty with your thumb to help them cook flat.
Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.
Cook patties
Heat a cast-iron skillet or nonstick pan over medium-high heat until hot (about 3–5 minutes). Add 1 tablespoon vegetable oil and swirl to coat. Add patties without crowding the pan. Cook for 3–4 minutes on the first side until a brown crust forms. Flip once and cook 2–3 minutes more for medium doneness. Adjust time for preferred doneness. During the last 30–45 seconds of cooking, place one slice of cheese on each patty and cover the skillet with a lid or tent with foil to melt the cheese.
Buns & assembly
Place a lettuce leaf on the bottom half of each bun. Add a cheese-topped patty. Top with tomato slices, red onion, and pickle slices as desired. Spread ketchup, mustard, and/or mayonnaise on the bun tops (or bottoms) to taste, then close the burger and serve immediately.
Toppings & condiments
If using raw onion and tomato, season tomato slices lightly with a pinch of salt to enhance flavor. Adjust amounts of condiments to taste. For a quicker service, assemble condiments on the side so each diner can customize.
