Mixing
Muddle for heat and flavor
In the cocktail shaker, add the jalapeño slices and the agave or simple syrup. Gently muddle 4–6 times — enough to release capsaicin and oils but not pulverize the pepper into bits.
Dry shake (if using egg white)
Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the egg white and create foam.
Wet shake
Open the shaker, add a generous handful of ice (or 3 large ice cubes), then shake hard for 10–15 seconds to chill and dilute.
Double strain
Using both the shaker strainer and a fine mesh strainer, pour the cocktail into a chilled coupe or Nick & Nora glass to remove jalapeño bits and any ice shards.
Finish & Garnish
Sprinkle a very light pinch of dried edible poppy petals across the foam or surface for a subtle floral note and the namesake visual. Float the candied damson or fresh plum wedge on the rim or skewer and rest across the glass. If using a micro herb sprig, lightly slap it between your hands to release aroma and place on the garnish.
Optionally, add 1–2 small drops of Angostura bitters on top of the foam and use a toothpick to create a tiny decorative pattern.
