Method
Meringue Nests
Prepare and whip
Preheat oven to 200°F (95°C). Line a baking sheet with parchment paper. In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Whip on medium speed until soft peaks form. Gradually add granulated sugar, one tablespoon at a time, then add powdered sugar. Continue whipping on high speed until glossy, stiff peaks form and the sugar is fully dissolved (rubbing a bit between fingers should feel smooth). Fold in the vanilla extract gently.
Pipe and bake
Transfer meringue to a piping bag fitted with a large round tip (or use a spoon). Pipe 4 even nests (about 2–3 inches / 5–7 cm across) on the prepared sheet, making a slight well in the center of each for the cream. Bake in the preheated oven for 1 hour 15 minutes to 1 hour 30 minutes until dry to the touch and easily lifts from the paper. Turn off oven and let meringues cool inside with the door closed for another 30 minutes to avoid cracks. Remove and cool completely on a rack.
Citrus-Vodka Cream
Chill equipment
Place mixing bowl and whisk attachment or beaters in the refrigerator for 10–15 minutes before whipping to ensure very cold equipment for best volume.
Whip cream
Pour the cold heavy cream into the chilled bowl. Add confectioners' sugar and vanilla extract. Begin whipping on medium speed and increase to high as it thickens. When soft peaks form, add the limoncello and vodka in a steady stream while continuing to whip to medium-firm peaks. Taste and adjust sweetness with a little more confectioners' sugar if desired. Do not overwhip — stop when peaks hold but the cream is still silky.
Assembly & Garnish
Place meringue nests on serving plates. Spoon or pipe a generous mound of the citrus-vodka cream into the center of each nest so it slightly spills over the edges but remains supported by the meringue.
Drizzle about 1/2 teaspoon of crème de cassis over the cream for each nest (reserve small extra to let guests add more if desired). Lightly sprinkle lemon zest over the top for bright citrus aroma.
Scatter a few fresh berries around or perched on the cream. Garnish each plate with a mint leaf. Serve immediately so the meringue stays crisp; if you must wait, keep assembled desserts in the refrigerator up to 1 hour but note the meringue will gradually soften.
