Make the Etouffee

In a large skillet, heat the butter and olive oil over medium heat. Add the onion, bell pepper, and celery, sautéing until soft, about 5 minutes.

Add Garlic and Tomatoes

Stir in the minced garlic and cook for another minute. Add the canned tomatoes, chicken broth, creole seasoning, bay leaves, salt, and pepper. Bring to a simmer.

Cook the Shrimp

Add the shrimp to the skillet. Cook until the shrimp are pink and cooked through, about 5-7 minutes. Remove bay leaves before serving.
