Preparation Steps
Prepare the Gochujang Aioli
In a small bowl, mix together mayonnaise and gochujang until well combined. Adjust the amount of gochujang according to your spice preference.
Cook the Rice Cakes
Boil the rice cakes in a pot of water for about 8-10 minutes until softened. Drain and set aside.
Stir-Fry Kimchi
In a skillet over medium heat, add the kimchi and stir-fry for 2-3 minutes until heated through.
Combine Rice Cakes and Kimchi
Add the drained rice cakes to the skillet with kimchi. Pour in soy sauce and stir well to combine. Cook for an additional 3-4 minutes until everything is heated through.
Prepare Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices.
Plate the Dish
Serve the kimchi rice cake mixture on a plate. Top with avocado slices, a drizzle of gochujang aioli, sprinkle sesame seeds, add pickled red onion, and finish with chopped green onions.
