Prepare Chicken

In a bowl, combine buttermilk, creole seasoning, salt, and black pepper. Add chicken thighs and let marinate for at least 30 minutes.

Prepare Potatoes

Boil the potatoes until tender, then drain and set aside.

Fry Chicken

Dredge marinated chicken in flour and heat vegetable oil in a large skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 7-8 minutes per side.

Cook Kale

In a separate pan, sauté kale with a little olive oil until wilted. Season with salt and pepper to taste.

Prepare Eggs

In the same skillet used for chicken, crack the eggs and cook to your desired doneness (sunny-side up, over-easy, etc.).

Plate the fried chicken, topped with eggs, alongside sautéed kale, roasted red peppers, and boiled potatoes.
