Method
Cooking the Salmon
Prepare the Salmon
Preheat your oven to 400°F (200°C). Rub the salmon fillets with olive oil and coat them evenly with blackening seasoning.
Bake the Salmon
Place the seasoned salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
Making the Roasted Red Pepper Hummus
Blend the Ingredients
In a food processor, combine chickpeas, roasted red peppers, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth.
Adjust Consistency
If the hummus is too thick, add more water, one tablespoon at a time, until the desired consistency is reached.

Prepare the Ginger Soy Dressing
In a small bowl, whisk together soy sauce, grated ginger, honey, and sesame oil until well mixed.
Prepare the Blood Orange Dressing
In another bowl, whisk together blood orange juice, olive oil, honey, and salt until well blended.
