Prepare the Ingredients
Preheat your oven to 375°F (190°C). Gather all the ingredients.
Roast the Apples
On a baking sheet, toss the diced apples with 1 tablespoon of olive oil and a pinch of salt. Roast in the oven for about 15 minutes until tender.
Sauté the Brussels Sprouts and Kale
In the same skillet used for onions, add another tablespoon of olive oil. Add the shaved Brussels sprouts and kale. Sauté for about 5-7 minutes until tender. Season with salt and black pepper.
Cook the Barramundi
Season the barramundi fillets with salt and black pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the barramundi for 4-5 minutes on each side until golden and cooked through.
Assemble the Dish
On each plate, layer the sautéed Brussels sprouts and kale, then place the barramundi fillet on top. Add the caramelized onions and roasted apples. Drizzle with chimichurri sauce before serving.
