Prepare the Rice

Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, coconut milk, and 1 cup of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes or until the rice is cooked. Remove from heat and let sit covered for 5 minutes.

Prepare the Ahi Poke

While the rice is cooking, cut the sashimi grade Ahi tuna into small cubes. In a mixing bowl, combine the Ahi cubes with sesame ginger soy sauce, diced cucumber, edamame, and chopped cilantro. Toss gently to coat the Ahi evenly.

Assemble the Bowl

Once the rice has rested, fluff it with a fork and divide it into serving bowls. Top each bowl with the Ahi poke mixture, then add the crushed avocado, kimchi, pickled carrots, pickled onions, and pickled ginger. Sprinkle sesame seeds on top for garnish.
