Battered Salmon Bites

    Prepare salmon

    Cut the salmon fillet into 1-inch bite-sized cubes. Pat pieces dry thoroughly with paper towels to remove excess moisture; this helps the batter adhere and prevents oil splatter.

    Make batter

    In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. In a separate small bowl, lightly beat the egg, then stir into the dry mix. Gradually add the cold sparkling water while whisking until a smooth, slightly thick batter forms. The batter should coat the back of a spoon but still be fluid; adjust with a tablespoon more water or flour if needed. Keep the batter chilled in the refrigerator until ready to fry.

    Optional panko dredge

    If using a panko coating for extra crunch, spread the panko breadcrumbs on a plate and place the fine breadcrumbs or extra flour on a second plate. Dredge each salmon cube first in the flour (or fine breadcrumbs), then dip into the batter, and finally press into panko so each piece has a light, even coating.

    Heat oil

    Pour oil into a deep heavy-bottomed pot or deep fryer to a depth of about 2 inches (approximately 3–4 cups depending on your pot). Heat the oil to 350°F (175°C). Use a thermometer to maintain temperature; if the oil is too cool, bites will absorb oil; too hot and exterior will burn before the salmon cooks through.

    Fry

    Working in small batches (do not overcrowd), gently lower battered salmon pieces into the hot oil with a slotted spoon or spider. Fry for 2.5–3.5 minutes per batch, turning occasionally, until golden-brown and crisp and the salmon registers 125–130°F (52–54°C) in the center for medium doneness (or 140°F/60°C if you prefer fully firm). If using panko, they may brown a touch faster—watch closely. Remove to a wire rack or paper towel–lined tray to drain and keep warm in a 200°F (95°C) oven while finishing remaining batches.

    Season after frying

    Lightly sprinkle a pinch of flaky sea salt over each batch immediately after frying to enhance flavor.

Dipping Sauces

    Soy-ginger dipping sauce

    Combine 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon toasted sesame oil, 1 teaspoon finely grated fresh ginger, 1 teaspoon honey or sugar, and 1 minced scallion. Stir until the honey dissolves. Taste and adjust saltiness or sweetness as desired. Transfer to a small serving bowl.

    Spicy mayo

    Mix 1/2 cup mayonnaise with 1–2 tablespoons Sriracha (adjust to heat preference), 1 teaspoon lime juice, and 1/4 teaspoon garlic powder. Stir until smooth and chill briefly before serving.

    Arrange the fried salmon bites on a platter or individual plates. Sprinkle the chopped green onions and parsley over the bites. Serve with lemon wedges and the prepared dipping sauces on the side.
