    Brush each ear lightly with the olive oil, then sprinkle evenly with half of the kosher salt and half of the black pepper. This initial seasoning helps form a seasoned crust during cooking.

    Grill: Place corn directly on the grill and cook, turning every 2–3 minutes, until kernels are charred in spots and tender when pierced, about 10–12 minutes total. Pan-sear: Add a small pat of butter to the hot skillet, place ears in the pan and roll occasionally so all sides char, about 10–12 minutes. Oven roast: Arrange ears on a rimmed baking sheet and roast, turning once, until lightly browned and tender, about 20–25 minutes.

    When corn is cooked, transfer to a plate. Immediately brush each ear with the remaining butter so it melts into the hot kernels. Taste and sprinkle remaining kosher salt and black pepper evenly.
