Muddle

Place 6 fresh raspberries and 0.5 oz simple syrup in a cocktail shaker or mixing glass. Gently muddle until the berries are broken down and release their juices but still have some texture (about 15–20 seconds).

Add spirits and citrus

Add 2 oz blanco tequila and 0.75 oz fresh lime juice to the shaker with the muddled raspberries.

Shake

Add a handful of ice to the shaker (enough to chill well). Shake vigorously for 10–12 seconds to combine, chill, and slightly dilute the mixture.

Prepare glass

Fill a highball or Collins glass with crushed ice (about 1 cup).

Strain and top

Double-strain the contents of the shaker over the crushed ice using a fine mesh strainer (to remove seeds and pulp). Top with 4 oz chilled ginger beer, pouring gently to preserve effervescence. Stir once gently with a bar spoon to integrate the ginger beer with the raspberry-tequila base.

Garnish & Finish

Thread 1 fresh raspberry onto a pick and rest it on the rim, or float it on top. Add a lime wheel to the rim and optionally tuck a mint sprig beside the lime for aroma. Serve immediately with a straw.
