Beignet Batter
Activate yeast and combine wet ingredients
In a small bowl, combine warm water (about 100–110°F / 38–43°C) with the sugar and instant yeast. Stir gently and let sit 5–7 minutes until foamy. In a separate bowl, whisk warm milk, eggs, and melted butter until combined.
Mix dry and wet
In a large mixing bowl, whisk together 2.5 cups flour and 1 tsp salt. Make a well in the center and pour in the milk-egg-butter mixture and the activated yeast. Stir with a wooden spoon or dough hook on low speed until a soft, slightly sticky batter forms. The batter should be thicker than pancake batter but looser than a typical bread dough; add up to 1–2 tbsp additional flour if excessively wet.
First rise
Cover the bowl with plastic wrap or a clean kitchen towel and let rest in a warm draft-free place for 60–75 minutes, until doubled in size and bubbly.
Prepare for frying
When the batter has risen, gently punch down to deflate slightly. Line a baking sheet with parchment and dust lightly with flour. Heat 3–4 cups of vegetable oil in a deep heavy-bottomed pot or Dutch oven to 350°F (175°C). Use a thermometer for accuracy. Keep a slotted spoon and a small bowl of flour nearby for handling.
Fry the beignets
Using two spoons or a small ice-cream scoop (about 1.5 tablespoons per beignet), scoop batter and drop gently into hot oil, 6–8 at a time depending on pot size—do not overcrowd. Fry, turning once, until golden brown on both sides, about 2–3 minutes per side. Remove to a parchment-lined tray or cooling rack to drain. Keep warm in a low oven (200°F / 95°C) while frying remaining batter.
Crawfish Cheese Sauce
Sauté aromatics
In a medium skillet over medium heat, melt 3 tbsp unsalted butter. Add the minced shallot and cook 1–2 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.
Make roux and add milk
Sprinkle 3 tbsp flour over the softened aromatics and cook, stirring constantly, 1–2 minutes to form a blond roux. Gradually whisk in 1.5 cups whole milk and 1/4 cup heavy cream, breaking up any lumps until the sauce is smooth. Bring to a gentle simmer while whisking; the sauce will thicken in 3–4 minutes.
Finish sauce with cheeses and seasonings
Reduce heat to low. Stir in shredded cheddar and pepper jack cheese a handful at a time until fully melted and the sauce is smooth. Add the Cajun seasoning, hot sauce, Worcestershire, lemon juice, salt, and black pepper. Taste and adjust seasoning as needed.
Finishing & Serving
Assemble: Place warm beignets on a serving platter. Spoon a generous spoonful (about 2–3 tbsp) of the crawfish cheese sauce over each beignet or arrange sauce in a shallow bowl for dipping. Garnish with additional chopped chives or microgreens.
Optional sweet-savory contrast: Lightly dust the beignets with up to 1/2 tsp powdered sugar each for a traditional visual contrast if desired. Serve immediately to preserve the beignets' crisp exterior and fluffy interior.
Storage and reheating: Leftover sauce can be refrigerated in an airtight container for up to 3 days—reheat gently over low heat, thinning with milk if necessary. Beignets are best eaten fresh; reheat briefly in a 350°F (175°C) oven for 5–7 minutes to refresh crispness.
