Prepare & Shake

Dry Shake (if using egg white)

Add gin, fresh lemon juice, elderflower liqueur, simple syrup, and egg white to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build froth.

Wet Shake

Open the shaker, add a generous handful of ice (about 1 cup), then add two dashes of orange bitters. Seal and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and the mixture is well-chilled.

Strain & Finish

Double-strain the cocktail through a fine mesh strainer into a chilled coupe or martini glass to remove ice shards and any solids. If you want a taller, more refreshing serve, strain into a rocks glass over fresh ice.

Top with 1.5 oz chilled club soda or sparkling wine if you desire a lighter effervescent finish. Gently stir once with a bar spoon to integrate the fizz.

Express a lemon twist over the cocktail by holding the twist over the drink and pinching to release oils, then run the peel around the rim and drop it into the glass.

Place a lavender sprig or an edible flower on the foam or beside the twist for aroma and an elegant finish. Serve immediately.
