Method

Cocktail

1

Prepare glass

Fill a tall hurricane glass or large Collins glass with crushed ice to chill while you mix the drink.

2

Combine ingredients

In a cocktail shaker, add the dark rum (2 oz), light rum (1 oz), passion fruit syrup or puree (1 oz), fresh lime juice (0.75 oz), fresh orange juice (1 oz), and simple syrup (0.5 oz). If using, add 2 dashes of Angostura bitters.

3

Shake

Fill the shaker with ice, secure the lid, and shake vigorously for 10–12 seconds until the outside of the shaker is cold and well chilled.

4

Strain and serve

Dump the ice from the chilled glass if desired and refill with fresh crushed ice. Strain the shaken mixture into the glass over the crushed ice. If you prefer a layered look, pour a little extra dark rum (about 0.25–0.5 oz) gently over the top to float.

Garnish & Finish

5

Garnish the drink with an orange wheel or slice and a maraschino cherry skewered and placed on the rim or floated on top. Serve with a straw.
