Prepare glass (optional)

If you want a cocoa-rimmed glass, place the cocoa powder on a small plate. Moisten the rim of a chilled cocktail or coupe glass with a little cream (from the 1 oz) or water, then dip the rim lightly into the cocoa powder to coat. Set the prepared glass aside in the freezer or refrigerator to chill while you mix the cocktail.

Combine ingredients

Fill a cocktail shaker with the measured ice (about 1 cup). Add 1.5 oz cognac or brandy, 1 oz dark crème de cacao, and 1 oz heavy cream to the shaker.

Shake

Secure the shaker lid and shake vigorously for 12–18 seconds. The goal is to chill, dilute slightly, and aerate the cream so the cocktail is smooth and frothy.

Strain and serve

Double-strain (or fine-strain) the mixture into the chilled coupe or martini glass to remove ice shards and any large bubbles. You should have a pale, creamy cocktail with a light froth on top.

Garnish

Grate fresh nutmeg over the top to taste (a light dusting is typical). Serve immediately.
