Prepare and combine
Chill glass and prepare ice
Place a serving glass (old-fashioned or small Collins) in the freezer for a few minutes or fill it with ice water to chill while you prepare. If you don't have crushed ice, place a few ice cubes in a clean towel and crush with a muddler or rolling pin to make roughly 1 cup crushed ice.
Measure and sweeten
Into a mixing glass or shaker add 2 tablespoons absinthe and 1/2 tablespoon simple syrup. Stir briefly to combine. The syrup will tame the herbal intensity of the absinthe and balance the drink.
Build the drink
Discard the chilling ice/water from the serving glass if used. Fill the chilled serving glass about three-quarters full with crushed ice (about 2/3 to 1 cup). Pour the absinthe-syrup mixture over the crushed ice, letting it lace through the ice as it chills and dilutes slightly.
Top and adjust dilution
Slowly top the drink with 60 ml chilled soda water (about 2 oz). Stir gently 6–8 times with a bar spoon or straw to evenly distribute the absinthe and dilute to taste. Taste and, if you prefer it sweeter or less intense, add another 1/4 tablespoon simple syrup or a splash more soda water and stir again.
Garnish and serve
Garnish with a fresh mint sprig by giving it a gentle clap between your palms to release aromas and place it atop the crushed ice. Serve immediately with a short straw or stirrer so the drink can be re-stirred as the ice melts.
