Prepare vegetables
Clean and slice the mushrooms thinly (about 3 oz). Core, seed and dice the red bell pepper to yield about 1/2 cup. Peel and finely dice the onion to yield about 1/4 cup. If using spinach, roughly chop or tear into bite-sized pieces.
Sauté vegetables
Heat a nonstick skillet over medium heat and add 1 tablespoon olive oil or butter. Once hot, add the diced onion and sauté for 1–2 minutes until beginning to soften. Add the bell pepper and continue to cook 2–3 minutes. Add the sliced mushrooms and sauté 3–4 minutes more until mushrooms release their liquid and it evaporates and vegetables are tender. If using spinach, add it in the last 30 seconds and cook until wilted. Season the vegetables lightly with a pinch of salt and a few grinds of black pepper. Transfer the cooked vegetables to a small bowl and wipe the pan clean with a paper towel if needed.

Beat eggs
Crack 3 large eggs into a bowl. Add 2 tablespoons milk or water (this loosens the eggs for a tender omelette), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until the mixture is uniform in color and slightly frothy, about 20–30 seconds.
Cooking the omelette
Cook eggs
Pour the beaten eggs into the preheated pan and let them sit, undisturbed, for about 20–30 seconds until the edges begin to set. Using a silicone spatula, gently push the set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Continue until the surface is mostly set but still slightly moist on top, about 1–1.5 minutes total.
Add filling
Evenly distribute the sautéed vegetables over one half of the omelette. Sprinkle 1/4 cup shredded cheese over the vegetables and scatter chopped chives or parsley on top.
Fold and finish
Using the spatula, carefully fold the empty half of the omelette over the filled half. Let it cook for another 30–60 seconds to melt the cheese and finish cooking through. If you prefer the omelette slightly browned, increase heat to medium for the last 10–15 seconds. Optional: add 1/2 teaspoon butter on top and let it melt over the folded omelette for extra richness.
