General preparation

Bring ingredients to temperature & prep

Remove eggs from refrigerator about 5–10 minutes before cooking so they come closer to room temperature (helps even cooking). Gather butter, oil, salt, pepper, and any serving items (toast, condiments). If using herbs, mince and set aside.

Fried eggs (sunny-side or over-easy/medium/hard)

Heat pan

Place a nonstick or well-seasoned skillet over medium heat. Add 1 tsp neutral oil and 1 tbs butter. Heat until butter melts and foam subsides but does not brown (about 30–60 seconds). Tilt pan to coat surface.

Crack eggs

Crack eggs into a small bowl or ramekin (one at a time) to check for shells and yolk condition. Gently slide eggs into skillet, spacing them slightly apart.

Cook to desired doneness

For sunny-side up: reduce heat to medium-low and cook undisturbed 2–3 minutes until whites are set but yolks still runny; optionally cover with a lid for 15–30 seconds to set whites on top. For over-easy: cook 2–3 minutes until whites set, carefully flip with a spatula and cook 15–30 seconds more. For over-medium: after flipping cook 45–60 seconds. For over-hard: cook 1½–2 minutes after flipping until yolk is fully firm.

Season

Immediately after removing from pan, sprinkle each egg with a pinch of salt and a grind of black pepper. If using herbs, sprinkle on now.

Finish

Slide eggs onto plate. If cooking for toast, spread 1 tsp butter on warm toast and place eggs on top or beside it. Serve with hot sauce or ketchup as desired.

Scrambled eggs

Beat eggs

Crack eggs into a bowl, add a pinch of salt and pepper, and beat vigorously until yolks and whites are fully combined and slightly frothy (about 20–30 seconds).

Heat pan

Warm a nonstick skillet over medium-low heat and add 1 tbs butter. Let butter melt but not brown.

Cook gently

Pour beaten eggs into the pan. Let eggs sit undisturbed for 10–15 seconds, then with a silicone spatula push the eggs from the edges toward the center in gentle folds. Continue folding and moving the eggs every 10–15 seconds until they are softly set but still slightly creamy — about 1½–3 minutes depending on heat.

Finish and season

Remove pan from heat when eggs are slightly underdone (carryover heat will finish them). Season with salt, pepper, and herbs if using. Serve immediately with toast or other accompaniments.

Poached eggs

Bring water to simmer

Fill a medium saucepan with 6–8 cups (about 1500–2000 ml) of water and bring to a gentle simmer (small bubbles). Add 1 tsp salt and 1 tsp white vinegar (optional, helps coagulate whites).

Create gentle whirlpool & add egg

Using a spoon, stir the water to create a gentle vortex. Crack one egg into a small bowl and gently slide it into the center of the vortex. Repeat for the second egg, placing it nearby but not on top.

Cook and remove

Cook for 3–4 minutes for runny yolks, 4–5 minutes for medium. Use a slotted spoon to lift eggs, briefly blot on paper towel to remove excess water, then season with salt, pepper, and herbs.

Serve

Serve immediately on toasted bread, English muffin, or atop salad/greens.

Soft- or hard-boiled eggs

Bring to a boil and simmer

Place eggs in a single layer in a saucepan and cover with cold water by about 1 inch (25 mm). Bring to a rolling boil over medium-high heat. Once boiling, reduce heat to maintain a gentle simmer and start timing: 6 minutes for soft-boiled with set whites and runny yolks, 9–10 minutes for firm, fully set hard-boiled yolks.

Shock and peel

When time is up, immediately transfer eggs to an ice bath for at least 5 minutes to stop cooking. Peel under running water for easier removal of shells. Slice or serve whole, season with salt and pepper.
